Economical utilization of carbohydrate‑rich side streams in cellular agriculture

A growing global population requires increasing amounts of sustainable and nutritious food.

Under changing climatic conditions, current agricultural practices will be insufficient to meet future demands. Protein is one of the most essential nutrients. However, increase in animal‑ or plant‑based protein production is ecologically challenging due to high land and water requirements.

Cellular agriculture has been proposed as a promising and sustainable solution to the rising demand for protein and other sustainable food components. However, in its current form, cellular agriculture is not economically viable, largely due to the high raw material costs. Agriculture and food industry side-streams are promising nutrient sources for cellular agriculture. This research aims to develop solutions for the sustainable and cost‑effective utilization of side-streams from tuber and root vegetable processing and plant protein isolation as raw materials for cellular agriculture.

Progress

Great start for the Programme! The first 36 postdoctoral researchers have been recruited and started their work. Half of them relocated to Finland from abroad.
